Whitefish

Whitefish means any fish that's typically white fleshed: cusk, pollock, hake, whiting, and more. While each species has its own unique characteristics, they are all mild and flaky and can often be used as substitutes in any recipe that calls for cod or haddock.

Monkfish

A staff favorite! Firm and easy to work with, monkfish has also been called "poor man's lobster." Monkfish has a stronger flavor than most whitefish, so it stands up well to more intense and earthier flavors.
