Dish the Fish: One Pot Coconut Rice and Flounder

Minimize the dishes and maximize the flavor with this simple one-pot fish dish.

A little dab will do ya
Dab (American Plaice) are flounders that yield small, tender fillets - they cook quickly, flake beautifully, and taste sweet and mild. Flounders are low fat, high protein fish with loads of vitamin B12, vitamin D, selenium, and omega-3s. You can always sub in another delicious local whitefish in this recipe, adjusting cooking time if the fillets are thicker. Just throw all the ingredients in one pan, cover with foil, and bake. The only thing you have to remember is to pull the fish fillets off the top of the rice about halfway through, since they cook so quickly!
One Pot Coconut Rice and Flounder
Serves: 2
Prep & cook time: 1 hour
INGREDIENTS:

1 can coconut milk
1 tsp minced garlic
1 tsp minced ginger
zest of 1 lime
juice of 1 lime
1 TB brown sugar
1 TB fish sauce
1 tsp salt
1/2 cup jasmine rice
1/2 cup thin sliced red peppers
2 dab fillets
cilantro for garnish
INSTRUCTIONS:
Preheat oven to 375°.
In a small baking dish (8"x8" is perfect), combine coconut milk, garlic, ginger, lime zest and juice, brown sugar, fish sauce, and salt. Mix well.
Add rice and red peppers to dish and mix well.
Place dab fillets on top of the rice/coconut milk mixture.
Tightly cover dish with tin foil to trap the steam.
Bake for 15 minutes at 375°.
Pull dish out of oven, remove fillets from the top if fully cooked (opaque and easily flaked / 145° internal temp). Tightly cover dish and return to the oven to finish cooking the rice - about 15 minutes.
Remove rice from oven and leave foil on top - allow rice to rest and finish steaming for 15 more minutes before removing foil.
Plate fish on top of rice and garnish with cilantro!
