Dish the Fish: Simple Flounder Fish Salad
A fresh fish salad with local flounder that comes together in about 30 minutes

Move over, chicken & tuna: flounder is in the house.
Baking a thin and tender dab (flounder) fillet is *almost* as quick as opening a can of tuna and certainly more delicious in this crunchy/tender/salty/sweet fish salad than a chicken breast would be. For this quick dish, all you need to do is pop some fillets in the oven and throw together an easy dressing. You can add any flavorings you like (celery, herbs, craisins, walnuts, onion, curry powder) or leave them out if you're a purist. Serve on top of a bed of crisp lettuce to add protein to a salad, toss it onto some soft white bread for a classic fish salad sandwich, or eat it as-is for a healthy, hearty meal.
Curried Fish Salad
Serves: 2-4
Prep & cook time: ~30 mins
INGREDIENTS:

2 dab (flounder) fillets, around 12-16 oz total (or use another local flakey white fish)
4 TB mayo
2 tsp mustard
2 tsp red wine vinegar
1/2 tsp garlic powder
1/2 tsp salt
1/2 tsp curry powder
2 stalks of celery, thinly sliced
1/2 cup craisins
1/2 cup parsley, finely chopped
optional: add walnuts, sub dill for parsley, add thinly sliced red onion - the world is your oyster!
INSTRUCTIONS:
Preheat oven to 350°.
Place fillets on a parchment-lined sheet tray and drizzle with olive oil and salt.
Bake fillets for ~10 minutes (until opaque / with an internal temp of 145°).
While fish bakes, combine all other ingredients in a medium-sized bowl.
When fish is cool, break into small pieces and add to the bowl with the dressing.
Mix gently until combined, leaving chunks of fish intact.
